As we always say, a spoonful of WILD virgin coconut oil is the best way to start every day. Our organic Virgin Coconut Oil is a great natural source of energy and a delicious addition to any breakfast. We have invited Karen Holt from the Health Seed Concept to contribute one of her favourite recipes using WILD – coupled with another superfood, Acai. Karen’s Coconut oil Acai bowl is sure to kickstart your morning right!
I am a firm believer that food can be both healthy and incredibly delicious. In fact, one of the reasons I started my business, The Health Seed Concept, is because I wanted to change the way people think about health, wellness, nutrition and yoga. That it’s not something detached from us, or a way to be ‘good’ instead of ‘bad’. Or a practice you bring into your life sometimes. Honestly, I believe that being healthy goes far deeper than ensuring you eat your greens. It’s about being completely present in your life. Ensuring that you are completely present to your body, your food, and your loved ones. That a simple life is possible in today’s world and the more we get back to nature the more we will see this truth.
That being said it’s not difficult to see why I gravitated towards Coconut Matter. I use Coconut Matter’s WILD virgin coconut oil every day!
This Coconut oil Acai Bowl is one of my favourites. The combination of organic WILD virgin coconut oil and Acai will ensure your skin is glowing and the coconut oil being a ‘good fat’ will help to slow down the sugar absorption from the fruit. This is a true bowl of goodness!
Finally, before we tuck in there’s just one more thing. Give thanks. Give thanks for beautiful food, wonderful people and the incredible coconuts from Mother Earth. This giving of thanks increases our awareness. Our mindfulness. Because the way I see it, we’re all connected, the food, the Earth, the happiness we share. We are One.
Coconut oil Acai Bowl
What You Need:
4 small frozen bananas
1 cup frozen blueberries
1 handful frozen spinach leaves
1 TBSP organic WILD organic virgin coconut oil
2 TBSP Acai powder
Approximately ½ cup coconut water
1 TBSP vegan plant protein powder
1 TBSP maca powder
For the toppings:
The Health Seed’s Cinnamon Buckwheat Granola
Use a high-powered blender for best results
What To Do:
- Start by blending the bananas first until you have a smooth consistency. You may need a little coconut water to get it all going. Add the coconut water slowly – too much will thin the mixture.
- Add the blueberries and spinach and blend until smooth. Add a little more coconut water if needed.
- Add WILD organic virgin coconut oil, and acai powder and blend until you have a thick and smooth consistency.
- Pour into a bowl and top with granola and blueberries
