Raw Brownies recipe- Lactose free, gluten free and sugar free

Eating well and eating healthy does not mean that indulgent treats have to become a thing of the past. When combined together, there are plenty of natural ingredients that can make for tasty treats which will please everyone in your household. Our Creamed Coconut is one such ingredient – it’s luscious and creamy as the name suggests. We recently invited Tanja Guigon-Rech of Nutrition Nation to contribute her favourite Raw Brownies recipe using Creamed Coconut. Follow along as Tanja transforms this classic dessert into a guilt free raw treat that is also lactose, gluten and sugar free.

Ingredients:
• 1 cup Nuts of your choice
• 1 Tablespoon of Honey or Coconut Nectar (available soon)
• 1/3 cup Cacao Powder (sugar free)
• 1/2 cup Dates (pitted) and ½ cup Dried Cherries
• A pinch of Salt
• 2 Tablespoon Creamed Coconut
• 1/2 Icing Recipe (See below)

Icing:
• 1 cup Dates
• 1/4 cup Cacao Powder (sugar free)
• ½ cup Still Water
• ¼ cup Creamed Coconut

Using a good food processor, finely blend the nuts with the Creamed Coconut and the dates / dried fruits until you get a smooth consistency. Transfer in a big bowl and mix it with the cacao and half of the icing recipe together to get the brownie “base”. Press it into a small form and let it rest.

Icing: blend and mix all the ingredients for the icing together (using a food processor). If you bend the dates with the water, you warrant a very smooth icing like consistency. Transfer the icing on top of the brownie form. Let it rest in the fridge for 2-3 hours and enjoy the Raw Brownies!
